My latest obsession: The Vegan “Scramble”

Hi y’all!

Did you know that I am a holistic health coach? To be honest, it’s something I “put to bed” for a few years because I really didn’t want to work on weight-loss with clients, and I recognized I needed to re-calibrate (so to speak) so that I could return to my coaching practice with a more clear perspective.

Holistic Health Coaching {for me} has nothing to do with pounds gained or lost. And has everything to do with an internal vibration/feeling of self-love and appreciation.

And just as a little gift to you, I wanted to share my latest obsession: The Vegan Scramble. Whether you are vegan or not, you’ll find this to be an incredibly filling and satisfying lunch or dinner. AND – you can modify to suit your taste!

 

The Vegan Scramble

  • 1/4 cup black beans (can also add ranchero beans, or crushed chickpeas)
  • 1/2 cup riced cauliflower
  • handful chopped kale (or spinach)
  • Other vegetable suggestions: roasted sweet potato, fresh chopped tomatoes
  • 1-2 cloves garlic, chopped
  • cheese of choice (I use Daiya vegan mozzarella)
  • spices: cumin, turmeric, sea salt, Penzey’s Turkish
  • extra virgin olive oil or coconut oil

Heat medium skillet on low to medium heat (depends on your stove) with about 1 tbsp oil. Add garlic and spices, lightly sauté. Add cauliflower and beans, season to taste. Add remaining vegetables of choice and lightly sauté. Finally, stir in cheese to melt and serve!

Serving suggestions: I love to eat mine with a fresh corn tortilla and a little hot sauce!

it all boils down to one thing: love

Sometimes I feel like I do so many different things. That i wear many different hats.
One day I’m with private yoga clients.
the next i’m at the recovery centers and then guiding a coaching client into their meditation practice.
and sometimes i feel like i wear too many hats…
but today i realized that all these “hats” are really just variations on a theme.
i work with people in the way that i can best connect with them.
whether it’s bowspring, yoga, meditation, health coaching, life coaching, or reiki… my intentions are always the same..

i hope and wish for people to feel aligned and connected.
i hope and wish for people to better understand and accept themselves.
i hope and wish for all people to know their purpose in life.
i hope and wish for people to know and understand that they are loved so that they may find unconditional, universal love. no matter the external circumstances.

i know that i’m good at what i do.
i know that i’m good at sharing my story.
i know that i’m good at reaching people.
i know that i’m good at holding space for people.

i know that i’m good at helping people understand that their bodies are a way to experience this planet, celebrate life, and feel joy.

Your body: a vessel for life exploration.

Your body is a tool for exploring the world. Says the incredibly wonderful, intelligent, thoughtful Renee Engeln, author of “Beauty Sick.”

Your body is NOT an object to be scrutinized, judged, picked apart, altered, fixed, or shamed.

And yet somehow incredibly intelligent, bright, thoughtful women sometimes fall under the misguided belief that our bodies are not good enough. Like … ever.

We KNOW better. We know that so many of the images used in advertising are not realistic portrayals of what so many of the women in this country look like or dress like. We know that thigh-gap is something some people are born with and some are not and it has nothing to do with how good or bad a person is. We know that cellulite and fat are not diseases.

And yet… sometimes we still fall under the misguided beliefs that if we have a week of “eating like crap” we need to make up for it by going on a 30 day regimen of closely monitoring our caloric/food intake and upping our exercise game.

And why? Well, when I did that it was because I was afraid I’d lose control and get further away from reaching perfection.

We perpetuate the body-shaming cycle in our culture when we make these choices out of FEAR.

And then we talk about it. To our friends, our partners, the clerk at the bra store. And the heart-sinking thing is not only that we perpetuate this kind of dialogue amongst our peers, but that the young people in our lives are exposed to comments like:

I hate my thighs.
I really need to cut back on carbs.
I better hit the gym this week or I’m going to puff up like a balloon.

No one ever says these things with bad intent. Usually it’s just a lack of awareness of the body shaming culture we are participating in.

And what’s going to change that? Recognizing our bodies are not objects that are on display and subject to shame, judgment, ridicule or in need of fixing, toning, modifying.

Our bodies are incredible vessels that allow us to explore the world. 

The next time you climb a flight of stairs, thank your thighs. The next time you pick up your pet, child, or bag, thank your arms. The next time you take a deep sigh of relief, thank your belly.

With practice these things start to add up and the little shifts lead to massive transformation.

We Are in the midst of a body shaming epidemic. Let’s change that.

Our society is in the midst of an epidemic of body shaming and self-loathing. There is a scarcity of self-acceptance.  6097785133_02db3aeb1b

Many of us learn, from a young age, that we are not alright just as we are. That our bellies could be flatter, our teeth whiter, our houses bigger, or our hair straighter. We struggle to look in the mirror and simply accept what we see, let alone love what we see.

I spent my late teens and early twenties battling bulimia. My self-loathing reached a point that I was creating physical harm to my body. I will say that the one thing that pulled me out of a lot of darkness was a regular yoga practice that helped me shift my belief system. I went from believing that my thighs were too chunky to feeling grateful for all that they were capable of. It is a work in progress, that I still struggle with from time to time to this day, but I now have the tools and capabilities to shift my thinking from body shaming to self-acceptance.

Imagine what life would be like if you could look at yourself in the mirror and notice each and every part of you as something that is beautiful. Imagine if you could recognize your “flaws” as the greatest parts of yourself. Imagine if you talked to yourself the way you talk to those you love the most – with words of utmost encouragement, kindness, and love.

This is what I work with people on through the modalities of Health Coaching and Bowspring Yoga.

Let’s start to make our own rules so that we see the rolls, spare tires, cellulite, dimples as markers of beauty rather than shunning them. All the while being more efficient in the way we move our bodies and treating ourselves better as we are getting healthier.

4 Weeks Migraine-free!

gratitude-quotes-03I want to shout something from the rooftops: 4 WEEKS MIGRAINE FREE!! I have been holding my breath and waiting for today to come because it marks a pretty monumental thing for me: 4 weeks without a full blown migraine attack. I have had headache days and days when it felt like I was in the early stages of a migraine but … NOPE! Not a single fucking migraine. I remember what it felt like to live this kind of life. Where I can make plans, and keep them (well, most of the time).

I have been struggling with the fact that this improvement is likely due to the fact that I am participating in a trial study for a new migraine drug. I wish I could tell you “I am healing myself 100%” … A part of me absolutely HATES that I get an injection of this drug every month … but then there is the part of me that recognizes and is eternally grateful for advances such as this in modern medicine.

I do make sure that I eat well, sleep well, move my body, and feed my soul – all things necessary for a healthy life.

So instead of feeling guilty that I am on this new drug, I will feel indefinitely grateful that I am starting to see the light. Migraines are no joke, it has been a rough few years and I can hardly begin to explain what a relief it is to know that I can possibly live this way again. Even if it is temporary, I am grateful. INSANELY grateful.

3 Reasons Endurance Athletes Benefit from Health Coaching

Why Do Endurance Athletes Need Health Coaching?

I have been fortunate to coach some pretty incredible endurance athletes over the last few years. And we aren’t talking professional endurance athletes: we are talking the athlete who has a family, a career, hobbies, and somehow manages to integrate a training schedule with enough hours to constitute a part-time job.

I love working with these people because of their intense drive and motivation – and also because I speak their language. I understand feeling like the “crazy” one who leaves a dinner party at 8:30PM because you have a 5AM training session.

So I was thinking about this – why DO endurance athletes need coaching? There are a myriad of reasons so I’ll start with three that really stick out in my mind:

Don’t ignore the basics: food and hydration.

Are you feeling drowsy every afternoon because of that 5AM brick workout, or because you are low on your water intake? Or could it be that skipping lunch because you are “too busy with work” is finally starting to catch up on your energy level during evening hill repeats? Proper hydration and nutrition seem simple enough but when we are juggling training for an endurance event PLUS everything life throws our way, we need to make sure we don’t ignore the basics.

It’s training for your mind and soul.

We spend so many hours every week fine tuning our body in preparation for race day. But what about preparing your mind? In coaching we confront all of the fears … the “what if’s?” of race day. One of my biggest fears around Ironman Lake Placid (and this is probably a popular one for many of you) was “What if I don’t finish?” I worked with MY coach and confronted this fear and came up with a mental game plan for how I might feel or react if I didn’t finish. And when I explored the what if’s instead of ignoring them, it felt like I got all my worrying out of the way. Like I had just “cleansed” myself of worries and had an (almost) worry-free race day!

It makes race day that much more meaningful.

One big reason I love coaching endurance athletes is that these folks have giant hearts and they aren’t afraid to dream big. They have an internal drive that pushes the envelope and is constantly curious what the human spirit is capable of. When you find tune your intention and reason for racing it’s like giving yourself an unlimited stash of mental GU gel. It’s a natural burst of energy that keeps you going through challenging training days and culminates in that final push on race day. Every race, every year, the reasons may change – they shift because we go through different obstacles in our lives. But when we cross the finish line, it’s so much more than just a PR or just a race – it’s a celebration. And that race can become one of the greatest learning experiences you’ll endure.
