My latest obsession: The Vegan “Scramble”

Hi y’all!

Did you know that I am a holistic health coach? To be honest, it’s something I “put to bed” for a few years because I really didn’t want to work on weight-loss with clients, and I recognized I needed to re-calibrate (so to speak) so that I could return to my coaching practice with a more clear perspective.

Holistic Health Coaching {for me} has nothing to do with pounds gained or lost. And has everything to do with an internal vibration/feeling of self-love and appreciation.

And just as a little gift to you, I wanted to share my latest obsession: The Vegan Scramble. Whether you are vegan or not, you’ll find this to be an incredibly filling and satisfying lunch or dinner. AND – you can modify to suit your taste!

 

The Vegan Scramble

  • 1/4 cup black beans (can also add ranchero beans, or crushed chickpeas)
  • 1/2 cup riced cauliflower
  • handful chopped kale (or spinach)
  • Other vegetable suggestions: roasted sweet potato, fresh chopped tomatoes
  • 1-2 cloves garlic, chopped
  • cheese of choice (I use Daiya vegan mozzarella)
  • spices: cumin, turmeric, sea salt, Penzey’s Turkish
  • extra virgin olive oil or coconut oil

Heat medium skillet on low to medium heat (depends on your stove) with about 1 tbsp oil. Add garlic and spices, lightly sauté. Add cauliflower and beans, season to taste. Add remaining vegetables of choice and lightly sauté. Finally, stir in cheese to melt and serve!

Serving suggestions: I love to eat mine with a fresh corn tortilla and a little hot sauce!

You never have to apologize for who you are.

Hey,

It’s been a while since I’ve been on here. And by “here” I mean connecting with you through this blog, sharing a part of my soul or a spark of inspiration that comes to me.

You see, over the past month I have …

  • Been healing from a break-up.
  • Unpacking the contents of my house that I had to unexpectedly move out of.
  • Re-homed my 2 kitties, 2 times.
  • Had my MailChimp account compromised and hacked (not to worry – no emails or personal data is at risk).
  • Decided to make things like FUN and COMMUNITY more of a priority than dating or making sure I “get all the jobs” and further my career.

And through all of this, one thing stands out. It is this:

I no longer want to hide parts of myself that I at one point in my life felt embarrassed about.

This does not mean I need to disclose every single detail of my personal life.

This DOES mean:

  • I’m no longer apologizing for the human being that I am becoming.
  • I am celebrating my body, mind, heart, and spirit – and everything I have been through thus far in this life.
  • I’m sharing more authentically and honestly. (So, like, if someone asks how I’m doing and I’m having a shitty day, I’ll tell them I’m feeling kinda low.)

How about you? Do you hide parts of yourself?

Often we do this because we are afraid we will not be accepted or loved. We are afraid people will turn our backs on us if they know that one thing we value so deeply but don’t share with anyone.

I learned several years ago that people WILL leave us sometimes. I lost a few of my oldest friends from growing up when I was about 27 because I began to honor my values and I began to create boundaries. It was a hard pill to swallow and in hindsight I learned that those weren’t my people because they didn’t celebrate all parts of me. And that’s perfectly ok!

This is not to demonize anyone. This is to let you know that A) it is normal for humans to hide parts of ourselves (especially in a culture that does not condone all body shapes, colors, sizes, etc.) and that B) it is normal for us to lose friends/partners when we do reveal all parts of ourselves.

But guess what?

When we stop hiding, and we begin celebrating all parts of ourselves, we begin to gravitate toward and attract the people who will really lift us up and celebrate WITH US. 

Doesn’t that sound way more enjoyable than pretending you are someone you’re not?

It certainly does to me. And it certainly feels a whole lot better and comes with a heck of a lot of freedom!

Today I invite you to explore: allow one part of yourself you’ve been hiding to peak its head out from the shadows – send that part of yourself extra love today. Love in the form of gentle self-talk, a bath, an extra show on Netflix, a nutritious meal, time with a friend who accepts all parts of you…

And just see what happens.

The Diet Stops … HERE.

I’m re-launching my holistic health coaching program. I became a health coach many years ago because people kept asking me health-related questions and I wanted to be more informed and also because my sister was doing the program and it sounded interesting to me. Haha. Truth!

Becoming a health coach was an interesting process and initially once I became certified and got clients MOST of those clients just wanted to lose weight.

What I really wanted, at my core, was to teach people how to have a healthier relationship to food and exercise. And to do this from a spiritual place.

But I didn’t know how to say that. And actually I felt a little afraid people would judge or not want to work with me if I said the “S” word – spirituality.

Now, spirituality is a non-negotiable for me. All that really means is, I can’t not have it come up with the people I spend most of my time with. It doesn’t mean I force anything on anyone, but that the way I explain and understand most things in life comes from a spiritual place.

And so as I’m rebuilding my holistic health coaching program I am finally offering something that feels like a huge YES.

It feels like me because i’m not asking anyone to weigh themselves. EVER.
I’m not asking people to never eat certain foods.
I’m not asking people to watch as their waste band shrinks.

I mean, I never really asked people to do these things in the first place. But I feel more firm in my convictions now than ever.

I’m teaching people to love what they’ve already got.

OK, at the very least to accept what they’ve already got.

The body that God gave them.
The mind God gave them.
The soul God gave them.

You have to accept yourself and your circumstances, at all times. Or growth just will not happen. It might happen for a split second, but then you’ll go back to old habits and patterns.

So I ask this of my clients – accept yourself and your circumstances AT ALL TIMES. Then watch as you grow.

So growth starts from the place of true acceptance.

Once you get THAT ^^^ everything begins to fall into place.

That is a promise.

These days I give way less f*cks about way more things…

I find that the older I get and the more I accept my body, like myself, and build a loving relationship with myself the list of things I give zero (or nearly zero) fucks about grows.

To name a few:

  • Shaving my legs consistently / having leg stubble.

  • Being tan. Because for a short while I used to really really want to have tan glowing skin. But I just don’t, and I never will, except for sometimes in the summer when the light hits just so after several days outside. But naturally I am rather pale with lots of freckles and moles.

  • Wrinkles. Someone once said wrinkles were a sign of a joy-filled life. Or something like that. And I concur.

  • Cellulite on my thighs. Cellulite on my tummy. Cellulite ANYWHERE.

  • And for that matter: trying to hide my cellulite. I’m done!

  • Brushing my hair / washing my hair more than 1-2 times per week.

  • When my weight fluctuates. Sometimes you’re up, sometimes you’re down!

It’s not that I don’t make myself presentable or put on makeup or blowdrying my hair (ok maybe 5 times per year) but it’s that I’ve learned to finally let myself off the hook for these things. I’ve stopped stressing about them.

Because, there are far more important things and beings and places and experiences that are so much more deserving of my energy and attention.

In case you needed it, I am inviting you to let yourself off the hook for something today. Go a little easier on yourself.

When things don’t go the way you want…

On the way to meditation this morning, I got a flat tire. And a wake-up call.

I left my house expecting “create more calm” and ended up having a scattered, stressful morning.

Just as I turned into the parking lot I heard a loud pop and felt the tire go out.

I had enough time to pull into a parking spot and dig in my bag for my Triple A card. I started to dial.

I needed to get this fixed. I believed:

-I was being punished.
-I had done something wrong (like eat flatbread the night before) to deserve this.
-This horrible, frustrating thing was happening TO me.

It took a moment but I put my phone down. Left my car with the flat tire in the parking lot, and walked into meditation.

The meditation was all about how powerful it is to STAY. Especially when we are in an uncomfortable situation.

The flat tire was a perfect example. I stayed.

My first reaction to the flat tire related back to my belief of: “I am always in trouble.” Here I was doing penance for my bad actions:

-Eating a “bad” food
-Getting softer around my midsection
-Not being as diligent with my exercise schedule lately or…
-Not being as kind as I could have when breaking up with an ex-boyfriend

I noticed this belief of always being in trouble { I’m in the process of shifting} reared it’s ugly head when I got a flat tire.

It hit me: the flat tire was NOT the universe’s way of punishing me.

Instead it was the universe’s way of teaching me how to stay, stop, and slow down. And see things for what they really are:

-Just a flat tire.
-Just a decadent meal.
-Just doing my best in a break-up.

These things are neither good nor bad. They simply are.

The fact that I’ve gained a bit more softness to my figure lately has nothing to do with how good or bad I am. It has nothing to do with my self-worth!

So … I stepped into this morning expecting calm, cool, and serenity.

And what I got was a jolt.

I got another wake-up call to keep building the muscle of body love and body awareness.

This morning did not go the way I wanted. It was uncomfortable, frustrating, and scattered. But as I waded through the messy morning muck, I stumbled upon a clearing, and a deeper connection with my deeper self.

My higher self, being, soul … ached because I was judging my evolving body. My soul needed love and compassion. So I gave it just that, went home, and entered back into my meditation.

So you see, when you go through a hard time – whether it be a flat tire or a life changing event – there is always, ALWAYS, a breakthrough on the other side.

And it’s in these instances where we must remember:

You are not being punished.

These instances give us opportunity to dig up what no longer serves us and make space for new:

-love
-growth
-awareness
-dreams

You must get out there and STAY when things get uncomfortable or messy or scattered. There is so much power in our ability to stay.
